apple and baking season

i got a bunch of apples last week from the farmer's market and i needed to do something with them.  the result was a delicious, fluffy, nutritious muffin that my roomates and i can't stop eating.  psst, there are carrots in them too! great for breakfast!

picturemmm... the recipe makes 18 but as you can see in the picture, their journey between the baking tray to the cooling rack proved perilous.


2 cups shredded apples
3/4 cup non-white sugar
1 lime
1 cup shredded carrots
1 cup fresh cranberries
1 cup trail mix (or any mixture of nuts... walnuts and almonds work well in this recipe)

2 1/2 cups flour (mixture of white and whole wheat)
1 tbsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/2 tsp ginger powder

2 1/2 tsp egg replacer + 2 tbsp cold water
1/4 cup apple sauce
1/4 cup oil

first, i shredded the carrots and put them in a large bowl.  then, i shredded the apples and drizzled lime juice over it to minimize oxidation.  once i had 2 cups, i mixed the apple shreds with the sugar, and then dumped the whole thing into the large bowl with the carrots.  then, i added also, the cranberries and the nuts.  i mixed it well and let it sit and mingle while i put together the other stuff.  the dry ingredients i sifted together and set aside.  then, i prepared the egg replacer, added into the apple sauce, and whipped in the oil- i was surprised that this produced a lard-like consistency!  once this was done, i dumped the dry ingredients into the apple mixture, and mixed with the fork until it was pretty well mixed (doesn't have to be uniform).  and then i added the oil mixture and stirred it all around until i got a gooey mass of deliciousness.  the key is to NOT mix too much or else the muffins will turn out too dense.  i baked them for 20 minutes at 375 for the first 10 minutes and 350 for the last 10 minutes.  i love fresh cranberries that turn into goo in baked goods!!!

the whole process only took as long as the 11 songs on the Islands cd to play.
