sorry, no picture this time, but it looks (and feels) like irish tea bread- brown, moist, and a little bit sweet.
1/3 cup vegan butter (i used earth balance)
1 tbsp canola oil
1/3 cup golden brown sugar
1 cup applesauce (room temperature)
3 tbsp molasses
1 tsp vanilla
1 egg replaced (i used ener-g)
2 cups flour (mixture of white and whole wheat- i used half and half)
2 tsp cinnamon
1 tsp ginger powder
1 tsp salt
1, 1/2 tsp baking powder
1/2 cup rolled oats
healthy sprinkle of flax seeds (almond chunks would have worked better but i was out)
as many as you like of fresh cranberries
preheat oven for 350F
1- in a large bowl, cream butter with oil. beat in sugar until combined. stir in molasses and vanilla
2- beat in (fake)egg, stir in applesauce
3- in another bowl, stir together dry ingredients. add flax and cranberries.
4- combine dry to wet, stir until JUST mixed
5- pour evenly into a loaf pan, bake at 350 for 30-45 minutes or until wooden skewer comes out clean
6- cool in pan for 30 minutes, and then on a wire rack sans pan until you can't resist eating it anymore
it tastes the best when totally cooled the next day. seems like it'd be best for tea-time in the afternoon.
