Kale Sweet Potato Balsamic Reduction Stuff:
1 sm red onion
3 cloves garlic
1 tbsp lemon juice (not super important)
1/4 c balsamic vinegar
3 tbsp or so brown sugar (taste as you add)
1 small sweet potato
Before you start anything else, preheat your oven to 450, wrap your sweet potato in aluminum foil, and put it in the oven for 30-40 minutes, until it's mostly soft and gives easily to a sharp knife.Chop your onion, garlic, and mushrooms while it's baking. I usually just tear the kale up as I'm rinsing it in a strainer. When your sweet potato is done and you can sort of touch it, cut it in half and peel off the skin (this should be easy). Sautee olive oil, onions, mushrooms, garlic, and sweet potato until the onions are translucent. Mix together lemon juice, balsamic, and sugar. Add kale and balsamic mixture. Cook until the kale is wilted and yummy. Season with pepper.
1 package White Wave Seitan
1/2 cup soy sauce
1/3 vegan sugar
1 tbsp corn syrup
2 tsp flour
1/3 cup water
Boil seitan for 10-15 minutes, marinade for however long you've got, and fry with cooking oil. So yummy.
Garlic Mashed Potatoes
3 cloves garlic
a lot of soy garden or earth balance
salt & pepper to taste
whatever kind of potatoes you feel like, and however many you've got
Cube and boil your potatoes, peeling them only if you really have to. When they're soft, drain. While they drain, sautee your garlic with a lot, and I really mean a lot, of vegan butter. Add soft potatoes and mash with soy milk until they're not too dry and season with salt and pepper. I mean, everyone knows how to do this, right?
Then pile it all in neat little sections onto pretty plates and eat it with good people and copious amounts of wine. Enjoy.
