1/2 cup oats
4 teaspoons baking powder
1/2 teaspoon salt (accidentally left this out)
1/4 cup vegetable oil
1 1/4 cups soy milk
3/4 cup (or more) cashew butter (any nut butter i'm sure would work)
combine dry ingredients, combine liquid ingredients, keep the cashew butter seperate. make sure each seperate part is well blended, then combine everything except the cashew butter. stir until just blended, then stir in the cashew butter. fill greased muffin tins or muffin papers 2/3 of the way full and bake on 400 degrees for 15-20 minutes. makes 13-15 muffins.
i found that this recipe turned out better if i let the batter sit for a few minutes in between mixing and putting into the muffin tin. i think it let the baking powder take effect or something. also, i heated my cashew butter a little before i added it because it was the bottom of the jar and it was a little chunky.
and, holy crap, these are the best muffins i've ever made!
