savory stuffing

i know thanksgiving is over but i've been too busy until now to share with you the recipe for this wonderful stufing my mother made me for the holiday. normally i'm not a stuffing-kinda gal but it was so delicious that i had to post the recipe. she found it in the latest issue of the humane society's magazine.

1/4 cup vegetable oil
1/4 cup diced onion
1/3 cup chopped celery
4 cups soft bread cubes
1 cup chopped apple
1/3 cup raisins
1/4 cup cranberries
1 cup vegetable broth
salt and pepper, to taste
1 teaspoon dried basil
1 teaspoon garlic powder
1 teaspoon dried oregano

1. pre-heat over to 350 degrees.

2. in a large skillet, heat the oil then saute the onion and celery until tender, about 5 to 7 minutes.

3. pour the sauteed vegetables into a casserole dish. add the reminaing ingredients, bread crumbs through seasonings. toss well, making sure the bread crumbs are completely coated in the vegetable broth. bake for 45 minutes.
