veggie chana masala

i made this 2nite and it was quick and delish.. took about 15 mins to make.

1 large clove garlic
1 tbsp curry power
1/2 tsp salt
1 med onion, chopped
chopped carrots, as much as you want
brocolli, as much as you want
1/4 tsp black pepper
2 tbs olive oil
1 can chickpeas ( save 3 tbsp of the chikpea liquid)
1 tbsp vegan margarine


in a pot cook the onions and carrots till tender. Then throw in everything except the margaine. stir everything around.. when everything seems cooked ( tender), melt in the marg.
Serve over rice.


PS.... my mom loved it, but then got all concerned about whether its safe to cook w/ margarine. your thoughts??
