chai cake

I made a modified version of THIS RECIPE for my friends birthday and had such extreme reactions to it (ie. people taking one bite and saying, shocked, "OH MY GOD this is the best cake i've ever eaten!?!") that i used the recipe again to make cupcakes to take to a psytrance rave last night. They were being given away free at a tea stall and at the end of the night the volunteers told me that they'd had people coming up to them saying "wow, there are good cupcakes, and then there are THESE cupcakes!".

Probably the most successful product i've ever made! I just wish i'd taken photos because i iced them prettily too, oh well, next time ;).

2 cups self-raising flour
1 cup granulated sugar
1/2 cup vegan margarine
2 tablespoons apple sauce
1 cup strongly brewed chai tea
1 tsp cinnamon
2 tsp vanilla essence
2 tsp baking powder

Preheat oven to 180^c
Brew the cup of chai (i used loose chai spices, and made it really strong).
Cream margarine and sugar in a bowl, then cream in applesauce.

Combine dry ingredients in a separate bowl.

Add dry ingredients and chai tea bit by bit into the marg and sugar mixture, whisking well to avoid lumps. Add more hot water if needed. Finally add vanilla essence.

Pour into greased cake tin or cupcake cases.

Bake for 30 mins (cake) or 20 mins (cupcakes), or until an inserted toothpick comes out clean.
This rises beautifully!

I iced some with vanilla 'buttercream', some with plain and chocolate icing (made with icing sugar and water). Either worked well :).
