The Monster Mash or The Imprecision Waltz

Today's lunch is a refrigerator surprise, and has turned out well.   In fact, it seems rather sophisticated, when it's simply what was to hand when I opened the fridge door.

Mish Mash

  • Handful of slivered/flaked almonds
  • Handful raisins
  • Leftover okara burgers (mine were made with onion and herbs rather than with veggies), diced into small chunks
  • 15oz can crushed tomatoes with basil
  • Roasted vegetables (4 small courgettes [zucchini] and 2 peppers, in this case)
  • Cooked brown basmati rice (approx 2-3 cups)
  • 2 tbsp or so herbs de Provence
  • Dash of garlic powder to taste
  • Dash cumin to taste
  • Salt and ground black pepper to taste

  • I lightly toasted the almonds in a cast iron skillet
  • I added the can of tomatoes + about 1/3-1/2 can of water
  • I added the herbs de Provence, garlic, cumin, salt & pepper, and raisins, and cooked for about 4 minutes
  • I then added the roasted vegetables and rice, and thoroughly combined the lot, cooking for another 4-5 minutes
