Sparkled Ginger Cookies

Sparkled Ginger Cookies
(From Vegan With A Vengeance)

  • 2 cups all-purpose flour
  • 1 tsp bicarbonate of soda [baking soda]
  • 1/4 tsp salt
  • 2 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 cup rapeseed [canola] oil
  • 1/4 cup molasses
  • 1/4 cup soymilk
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 tbsp turbinado/demerrara sugar (I used caster sugar)

  1. Heat oven to 180C/350F and grease a couple of baking trays
  2. Place the 4 tbsp of sugar into a small bowl and set aside
  3. Sift together the flour, bicarb, salt and spices
  4. In a seperate bowl, mix all wet ingredients and sugar and mix well
  5. Add dry ingredients to wet
  6. Roll biscuit mixture into 1 1/2 inch discs and place one side into the small bowl of sugar before placing an inch apart on the trays and bake for 12 minutes
  7. Cool for 5 minutes on trays before placing on cooling rack

I have to say, these are gorgeous.  Having made one batch, I'm about to make another to take over to the parents for Christmas.  Highly recommended.
