1 1/2 cups vital wheat gluten flour (most grocery stores will have this)
1/4 cup nutritional yeast flakes (grocery or health food stores)
1 cup very cold water or vegetable broth
1/2 cup soy sauce
1 tablespoon tomato paste
2 cloves garlic, pressed or grated
10 cups water or vegetable broth

1.) in a large bowl, mix together vital wheat gluten flour and nutritional yeast flakes.
2.) in a separate bowl, mix together remaining ingredients: water/veg broth, soy sauce, tomato paste & garlic.
3.) pour the wet ingredients into the dry and combine with a firm spatula, knead dough for about 3 minutes until a spongy, elastic dough is formed. let dough rest for a couple of minutes and prepare your broth, but don't start boiling it.
4.) now roll your dough and break it into pieces and form it into a chicken drumstick like manner.
5.) place the pieces in the broth. it is important that the water/broth be very cold when you add the dough, it helps with the texture and ensures that it doesn't fall apart. partially cover the pot, with room for steam to get out and bring to a boil.
6.) when the water has boiled, set to low and simmer for an hour, turning the pieces every now and then.
7.) MAGICAL GLUTEN/SEITAN HAS NOW BEEN MADE! Let it cool in the simmering broth for at least a half an hour. seriously.
oil for deep fryer
matzo meal crumbs or other vegan bread crumbs (enough for breading)
wheat flour and spices (enough to coat)
wooden skewers for the stick part (duh)
8.) take your delicious seitan pieces out of the broth after it's cooled and place on a plate. get out a bowl for broth, flour/spices and bread crumbs. 3 bowls total!
9.) this is not really exact here, but should make sense. pour some broth into first bowl, in a sereate bowl mix flour and yr fave spices together.
10.) roll seitan pieces in broth and then the flour, when fully coated, place on a plate. Let these pieces dry for about 10 minutes.
11.) dip flour covered seitan pieces in broth again and now roll in the bowl with the bread crumbs. set aside and let these dry as well.
12.) get out your deep fryer and heat to 375 degrees. when fully heated, put yr coated seitan pieces in. do not put them on top of each other, side by side is fine, but stacking will fry it all in a weird clump and that ain't right.
13.) the fry time will depend on how big your fryer is. when it has a nice golden brown coat. it's done. get'em out. put the skewers in the seitan pieces and VIOLA!
