fortune cookies?

I can't seem to find a recipe for fortune cookies! the non vegan ones I find seem to rely largely on eggs, and I know that its possible to make them without (as I've eaten a lot of them that don't have eggs!)

I have some ideas for experimentation, but would love some suggestions, and preferably tried and true recipes.

I just want to make these, but I also think they will be great for valentines day and giving to random people. (I really want to give cookies to random people who I see around, but even though I make cookies all the time, they rarely end up leaving my house)

oh and any other cookie recipes that you've been loving lately would be welcome.

the best ones I've made lately are these-

Cornmeal-Thyme Cookies

1 3/4 cups all purpose flour
1 tsp. baking soda
1 cup cornmeal
1/2 tsp. Salt
8 oz. margarine
1 1/4 cups sugar
2/3 cup applesauce
3/4 cup dried currents
1 tbsp. finely chopped fresh thyme

Preheat oven to 350 degrees. Cream margarine and sugar, mix in applesauce. Sift in flour, baking soda, cornmeal, and salt and mix until just combined. Mix in the currants and thyme. Plop tablespoon size blobs of the dough onto cookie sheets and put into the oven until golden, about 10-12 minutes.
