zucchini pepperoni

this is another good recipe for those trying to cut down on soy products... i got the idea from one of rachael ray's 30 min meals books, i think the original one.

just thinly slice zucchini into rounds and marinate them in olive oil, salt, pepper, italian seasonings (oregano, basil, thyme... whatever you think would go good in pepperoni), and maybe a few red pepper flakes. then, voila! use just like pepperoni :D
