Vegan Peanut "Sausages"

I made these for supper tonight and they were delicious! The recipe comes from a cookbook called The Single Vegan by Leah Leneman. I served them with a green salad. I regret not having a picture, but they were gone before I could take one!


Vegan Peanut Sausages
1/3 cup unsalted dry roasted peanuts
2 ounces dried bread crumbs
1 tablespoon garbanzo bean flour*
1 tablespoon tomato paste
1/4 teaspoon Marjoram, dried
1 teaspoon soy sauce
1/4 cup water
1 tablespoon vegetable oil

Grind the peanuts. Put them in a bowl with the breadcrumbs, garbanzo bean flour, tomato paste, marjoram, and soy sauce. Add the water and stir well. Form the mixture into sausage shapes. Heat a little oil in a frying pan and fry the sausages for 5-7 minutes, turning frequently. Serve with a side salad.

*Bob's Red Mill makes this. I used 1 tbsp of Fantastic Foods Felafel Mix that I had on hand.
