Cucumber and Coconut Soup with Mango Salad

We decided to go for a "light" lunch, although I was stuffed by the end. It consisted of cold cucumber soup and a spicey mango salad. Both recipes from Vegan Planet, and both very delicious.

Cool Cucumber Soup with Cilantro and Lime
1 garlic clove or 1 tsp crushed garlic paste
1 tsp sea salt
2 large cucumbers, pealed, seeded, chopped
2 cups vegetable stock
14 oz can light unsweetened coconut milk
2 tbs fresh lime juice (1 lime)
1 tbs minced fresh cilantro
1/2 seeded jalepeno pepper
8 thin cucumber slices for garnish
whole fresh cilantro leaves for garnish

1. Put the garlic, salt, cucumbers, and jalepeno in a food processor and process until smooth. Add the stock, coconut milk, lime juice, and minced cilantro and process smooth.
2. Transfer to a container to refridgerate for a few hours to blend flavors.
3. Serve with garnish (cucumbers and cilantro).

Thai-Style Papaya Salad
4 cloves garlic, minced or 2 tsp crushed garlic paste
1 tsp peeled and minced fresh ginger
1 tsp Asian chili paste
2 tbs brown sugar
1/2 c fresh lime juice (I used lemon, about 2 lemons)
1/4 c tamari or soy sauce
2 medium green papayas (I couldn't find papaya so I used mangos), diced
1 small carrot, peeled and shredded
1/2 c chopped unsalted dry-roasted peanuts (I actually forgot these and it was still yummy)
4 Boston lettuce leaves
12 thin cucumber slices for garnish
4 cherry tomatoes for garnish

1. Combine garlic, ginger, chili paste, and sugar in a bowl. Stir in lime juice and tamari.
2. Put in papaya (mango) and carrots and peanuts and toss well. Serve over lettuce leaf and topped with cucumber slices and a cherry tomato.
