I have searched through some older posts as well as online, and I can't seem to find any vegan sugar cookies that aren't soft/chewy/puffy. I want crunchier cookies that I can ice, like these: http://www.johnandkristie.com/archives/2005/10/perfect_sugar_c.html. I don't want to use this recipe, because I don't want to use vegan cream cheese. I am trying to figure out how I could make them without the cream cheese. Does anyone have any suggestions or a recipe for crunchier vegan cookies? I tried over-baking a soft cutout cookie recipe, but it didn't do that much. The cookies still puffed up too much to ice. Thanks!
