Friday Night Greek

Vegan Gyros

spiced 'meat' filling:
I used this baked seitan recipe as my base. I changed the spicing to be more Greek like. I made this several days ahead of time and then tonight I cut into strips and gave it a quick fry in some olive oil.

Feta Cheese:
I used Bryanna's Feta Cheese recipe. I didn't change a thing. This needs to be made at least 3 days ahead of time so it can brine.

Not sure where or when I picked up this recipe - I found it in my database with no name attached. Kudos to whoever came up with it!

1 cucumber, peeled and shredded (I actually used 2 - they were smallish)
1/2 onion, peeled and shredded
1 12oz. container vegan sour cream (I used Tofutti Sour Supreme)
1/8 cup olive oil
1/8 cup fresh lemon juice
2 tsp. dried dill*
1/4 cup chopped mint
1/2 tsp. tahini
a pinch of cayenne pepper

Combine all ingredients in a food processor and blend until smooth.
*Note: If using fresh dill, use 1/3 cup.

Finally I got some fresh pita bread from a local Armenian market - rubbed it with a little baked garlic, layered in my seitan of goodness, with chopped tomatoes and onions, crumbled in my 'feta' and spooned on the tzatziki.

Mmmmmmm it was really really really good!!!
