spreading truffle love

Would you like to know the secret to *amazing truffles*?

I found this recipe on recipezaar, where some bright person had the idea of creating a cream substitute out of cashews:

3/4 cup raw cashews
3/4 cup cold water
1 lb bittersweet chocolate
cocoa powder

1. Put cashews and cold water in a blender and blend at high speed for 1-2 minutes (yes a long time). Scrape the sides down and blend again until the mixture is the consistency of heavy cream.
2. Meanwhile, in a double boiler heat the chocolate until it's all melted.
3. Cool the chocolate until it's comfortable to work with and fold in the cashew cream (making sure not to stir too fast or you'll create bubbles).
4. Cool in the fridge for 2 hours (to set).
5. Take out a small ball, roll in cocoa powder and store in fridge/freezer. Repeat until done.

I made them for my mom for mothers day, and experimented for some variety
(tweaked the ratio and added raspberry jam to some--> win)
(tweaked the ratio and added almond extract, peanut butter, and almond pieces--> lose, tastes unpleasantly like alcohol. but I'm sure you can come up with something better)



I highly recommend these. (understatement of the week.)
