Pancakes/Waffles for one

So I've been lurking around here for awhile. I'm in the middle of the transition from vegetarian to vegan. So I'm not a full blown vegan, yet. But the past couple of days I've been expermenting with pancake/waffle batter and today I made the perfect waffle. I don't do exact measures of anything really. But I'll give you all the approximate measures. These aren't soggy!!! Especially if you make them on a waffle iorn. They are really thick, probably because I add more baking powder because I like mine really fluffy. :)

1 cup flour
1 cup soymilk (I might have used a little more because it's very dry where I live, but I just add until it reaches the consistancy I like which it really thick) (I also used about half reg. soymilk and half Chai flavored soymilk...so good)
2 tsp baking powder
3-4tblsp brown sugar (this is a questionable ingredient whether it's vegan or not so you can use whatever sugar you want)
cinnamon
vanilla (I didn't have any today so I didn't use it and it tasted fine)

Then I cook it in my waffle iron until it's nice a golden and it's crispy and then fluffy in the middle.

Then add fruit if you want, top with whatver. I just topped it with Earth Balance butter spread and some powdered sugar, since I don't have syrup. I also sometimes make a fruit syrup. I just take frozen fruit and heat it up in a pan until the juices come out. You don't even need to add sugar.
