I have a class potluck coming up this Thursday June 7th and I don't have any ideas.
My dish must be easy to transport (as I will be taking the bus in the morning). There are around 25 people in my class, but my dish doesn't need to feed them all. The dish must be able to be eaten cold, as heating isn't really an option.
All I can think of was pasta salad, but tomatoes aren't really in season yet and my pasta salad recipe calls for lots of heirloom tomatoes.
I have access to all the normal cooking supplies plus a blender and food processor and a fully-stocked kitchen.
Any suggestions will help.
Also, you get extra points if your recipe calls for basil and/or spinach, because I have lots of both right now.
