Thick and Creamy Cauliflower Soup

My husband doesn't like cauliflower unless it's roasted with garlic, but I had a large head of cauliflower to use before it went off.  So:
  • 1 large head cauliflower, coarsely broken into large florets
  • 3 medium white potatoes, roughly cubed
  • 2 medium yellow onions, coarsely chopped
  • Vegetable broth
  • Mixed herbs, salt, pepper
  • A teaspoon or two of paprika
  • Olive oil
  1. Sautee the onions until soft and opaque
  2. Add potatoes and cauliflower, and don't quite cover them with broth
  3. Add seasonings to taste
  4. Cook until tender (I used the pressure cooker, so it took five minutes or so)
  5. Blend to a thick, creamy consistency - almost that of a puree
  6. Serve with crusty granary bread and butter

I am told that it's very good: Victory is mine!
