Fabulous Fluffy Brownies

These are delicious vegan brownies. They have a light texture when hot, like eating a cloud, but are surprisingly rich! They are much denser cold, almost like fudge! You'll want two but will only be able to eat one!

I use all organic ingredients, which is good for the environment and good for you! Tastes better too! I use spelt flour and agave instead of wheat flour and sugar, which makes my tummy feel so much better!

1 and 1/2 cup spelt flour
1/2 cup oat flour
3/4 cup unsweetened fair trade cocoa powder
1 tsp baking powder
1 tsp salt
pinch of cayenne pepper
pinch of curry powder
1 cup almond milk
1 tsp vanilla
3/4 cup agave syrup
1 cup coconut oil
1 tbsp shaved dry coconut

optional: 1/2 cup chopped walnuts

Preheat oven to 350 degrees.
Combine all dry ingredients except the shaved coconut and spices. Mix well.
Combine all wet ingredients. You may have to melt the coconut oil.
Add wet ingredients to dry in a mixing bowl, and mix well (I use an egg beater).
Brush a thin layer of coconut oil onto a small baking dish (mine is a 7x7" square which makes the perfect size brownies), or double your ingredients and use a full size one.
Pour brownie mixture into baking dish.
Sprinkle your spices over the top.
Sprinkle the shaved coconut over the top to taste.
Bake for 25 minutes (give or take). Do not over cook.
Let cool for 10 minutes.
Cut into squares and enjoy!

Makes about 9 brownies.
