Kale w/ Sweet Onion & Tempeh (Served with Mixed Rice & Miso Peanut Sauce)
1.5 bunch kale washed & torn
1 sweet onion chopped
1 package tempeh cubed and poached in hot water
2 cloves garlic pressed
Melt butter in pan on slightly over medium heat, add a little bit of water (less than 1/8 cup). Add garlic and onion, cook until onion is half done.
Add kale, cook until almost completely wilted, push mixture to side of pan.
Add a bit more butter and tempeh to clear side of pan, allow to fry up a bit.
Turn heat down to very low & cover until ready to combine with:
4/5c Mixed Brown Rice & 1/5c Wild Rice
2c Veggie stock + 1/4 c more water
Bring to Boil, Simmer for over 45 minutes, remove from heat cool 10 m, fluff with fork
Miso Peanut Sauce
3+ spoons peanut butter
several glugs peanut oil
several splashes rice vinegar
1+ spoon miso paste
garlic & ginger to taste
add water to create a pourable consistency
