spicy quinoa, black beans & corn burritos.
1 cup uncooked quinoa
2 cups water
1 large vegetable bullion cube
1 can of black beans, rinsed and drained
1 can of corn, rinsed and drained
1 small onion, chopped
2 tbsp vegetable oil
6 burrito sized tortillas
sliced jalapeños, to taste (i used the diced ones in the jar)
siracha hot chili sauce (or salsa), to taste
vegan cheese, to taste (i used shredded follow your heart mozzarella)
1.) preheat oven to 450 degree F.
2.) in a medium sized saucepan, bring 2 cups of water (with bullion cube in it) to a boil. add quinoa to boiling water, stir, cover and turn to low. Cook for 20 minutes or till all the water is gone, set aside covered.
3.) in a large skillet, add vegetable oil and heat on a medium heat. add onions and sautee till translucent. add black beans and corn and cook till everything is heated through.
4.) scoop even amount on each tortilla: quinoa, black bean/corn/onion mixutre. add chili sauce, jalapenos and shredded vegan cheese to taste and wrap the burritos up and place on a baking tray.
5.)place burritos in oven and bake for 10 mins.
