what to eat... easy chili!

Here's what I made tonight. The hubby was mega hungry and I didn't want to run to the store... so I used what we had on hand and came up with this yummmmmy chili

What's in the cupboard Chili

1 can kidney beans
1 can black beans
1 can tomato soup (w/o dairy)
3 carrots (peeled and diced)
1/2 onion (diced)
1 tsp mashed garlic
3 or 4 tbsp cumin
2 tsp fresh rosemary (diced) *or a bit more if using dried*
cayenne (however much you dare)*1 tsp is a mild medium*
1 1/2 cup corn
1 cup water (add more if you like, I like thick chili)

Put it all in a big pot and bring to a boil, lower heat & simmer with a lid on for about 1 hour. When it all looks good and cooked take off the lid & let it sit for about 15 minutes. Serve over brown rice. Yum! (4 BIG - 6 medium sized servings depending on how big your bowl is)
