York-A-Like Peppermint Patties
Ingredients (use vegan versions):
1/3 cup corn syrup
1/4 cup of buttery spread of your choice, softened (I use Earth Balance whipped)
4 and 3/4 cups of powdered sugar
1 and1/2 teaspoons of peppermint oil/extract ( I like more)
a bag of carob chips or if you prefer chocolate chips ( I use carob chips)
I've wanted to try adding other flavors in these too, haven't yet, but if you feel spunky...go for it. These have family and friends coming back for more every time. "I can't believe they are not Yorks!!"
Whip together syrup, margarine, and peppermint (easiest in a mixer. Add sugar by the cup while mixing. You should end up with a crumbly, sort of dry bowl of stuff.
Pick up a small handful of stuff and start to press it into shape. The size you want is up to you. They are so rich that smaller is better. This process is a lengthy one. It's easiest to use a cookie sheet covered with wax paper/plastic wrap to place them on.
Melt the chips until creamy and stir-able. Take it off the heat so it doesn't burn. Coat the patties with the carob/chocolate. This is the messy part and I haven't found an alternative way without special equipment. None the less a fun awesome recipe to do alone or with family. As I said I recommend a little more peppermint but that's entirely up to you. Please enjoy and have a wonderful holiday season!!

I found it helpful to put the peppermint mix in the fridge for about on hour before dipping.
