Fancied-up Oven Fries

Hey All-- Inspired by Webtar's recent Pesto Fries, and some fries I had awhile
ago at a pub topped with fresh tomato-onion salsa, I came up with this tonight
for dinner in order to use up all my leftover sauces and tofus from last night's
dinner (which, incidentally, was the Green Goddess Rice Bowl from the cookbook
ReFresh by Ruth Tal. This is officially my new favourite cookbook- it has lots
of great sauce and dressing recipes, etc., that are good for light summer
cooking...)

It has some marinated tofu triangles, oven fries, and the Tahini Sauce and
Simple Sauce from the book mixed with chopped tomato and green onion. So tasty!
I usually just post to veganfoodpics but I wanted to do a follow-up to Webtar's
oven fries idea...
Here are the assorted recipes:

Oven Fries:
I cut up potatoes into fry shapes, toss with a teaspoon or two of olive oil, and bake all lined up on a rack placed on a cookie sheet (this way needs less oil)--with salt and pepper-- at 400 F degrees until brown and done (I think usually about 45 minutes? But it varies, watch them.)

Tahini Sauce from ReFresh (this is a half-batch, and even then I had enough for 2 rice bowls and the fries):
1 clove garlic
1/4 c. parsley
1/4 t. salt
1 T. lemon juice
1/3 c. water
1/4 c. tahini
Blend the first 4 ingredients in a blender, then add the water and tahini and blend again.

Simple Sauce from ReFresh (this is a half-batch, and you just use a couple of spoonfuls on each rice bowl and around one spoonful to combine with the tahini sauce with the fries, and now I still have some leftover!)
1/4 c. tamari
1 and 1/2 T. sesame oil
3/4 inch chunk ginger root, minced
2 T. lemon juice
In a saucepan, simmer all ingredients together for 5-10 minutes, then let cool.

Marinated Tofu Steaks from ReFresh
Marinate a pound of tofu slices in:
2 t. coriander
4 t. garlic powder
1/2 c. tamari
2 c. water
This makes a lot of marinade- I probably could have halved it. Then you grill or fry the tofu.

For the fries, I had leftovers of the tofu and each of these sauces, so I just mixed about a spoonful of the Simple Sauce and 2-3 spoons of the tahini sauce and some tomato and green onions, and served with the fries and a few slices of the tofu.

And here's what the leftovers came out of: the Green Goddess Rice Bowl from ReFresh!
Rice, toasted nori bits, steamed beet greens and broccoli, tofu, and some of each sauce. (It also calls for pickled ginger and sunflower seeds, and different greens.)
