Supah Fruit Muffins

I made these up this morning. I was craving muffins and happened to have a bag of all fruit trail mix lying around. They turned out really good, so I thought I'd share.

1 1/2 cups unbleached flour
1 1/2 cups whole wheat flour
3/4 tsp. baking soda
3/4 tsp. non-aluminum baking powder
1/2 cup unrefined sunflower oil
3/4 cup mape syrup or agave nectar
1 tsp. vanilla extract
1 tsp. vinegar
1 cup Soymilk
1 cup all fruit trail mix

Sift all dry ingredients together and whisk all wet ingredients together. Combine. Fold in fruit. Spoon batter into a muffin tin with muffin cup liners. Bake at 325°F for about 30-35 minutes.
