white bean and veggie soup

1 small white onion, chopped
3 cloves of garlic, minced
1 large shallot, minced
2-3 table spoons of olive oil
salt & pepper

in a BIG pot, on medium-high heat, sautee the onion, garlic and shallot in the olive oil for 3-5 minutes. add in the salt and pepper.

add 1/3 to 1/2 of a cup of white wine, cook until the alcohol smell starts to go away.

add in:

3 cups water or veggie broth
1 cup white beans, dried (i got mine in the bulk section - super cheap!)
5 carrots, sliced thin
1 head of swiss chard, chopped
1 bunch Italian flat leaf parsley, chopped

stir all together, lower heat to simmer, cover with lid

after about a half an hour, add in:

about 1 teaspoon dried red chile flakes (you know the kind you put on pizza?)
1 teaspoon chipotle chile powder
a few sprigs of thyme, with the leaves pulled off an minced
a few springs oregano, with the leaves pulled off and minced

let simmer for a good 2 hours, adding more water/veggie broth so that everything in the pot is covered with water at all times! a good way to tell if its done is when the beans are SUPER soft, and the beans start to actually thicken the broth.

eat with French bread and earth balance margarine, and oh man, it's good!
