For anyone that doesn't know, banoffee pie includes a crumbled cookie crust, toffee, bananas, and whipped cream.
Usually the toffee is made by boiling cans of sweetened condensed milk, or just from a jar of packaged toffee or dulce de leche.
Here's the catch: I am extremely lactose intolerant, and eat about 98% vegan (fish or eggs on rare occasion when I'm stuck for protein). I found some soy whip to replace the whipped cream, but I'm not sure I can find/make a non-dairy version of the toffee/dulce de leche layer.
If I'm really stuck, I'll just prepare it with the dairy ingredients and skip out on sharing it, though I would prefer not to.
So, I would be extremely grateful for any suggestions!
