Roastie Ratatouille

Takes 40 minutes, serves 4:

Ingredients:
  • 2 medium aubergines [eggplants] or 1 rather large
  • 2 green bell peppers
  • 1 red onion
  • 6 medium tomatoes
  • Salt
  • Ground black pepper
  • Lemon juice
  • Maple syrup
  • Olive oil
Method:
  1. Heat oven to 200C/400F
  2. Wash aubergines, bell peppers, and tomatoes
  3. Pour olive oil and salt into your palm (make it about the size of a beer bottle top) and smooth over the whole aubergines, and put them on a baking tray
  4. Roughly dice the onion and peppers, put them in a pan, and pour a tablespoon or two of olive oil, a tablespoon of lemon, and a couple of teaspoons of maple syrup over them.  Add salt and pepper to taste, and toss
  5. Place the aubergines, onions, and peppers in the oven for 35 minutes
  6. Lightly cut twice around the tomatoes, each cut bisecting the other and forming 4 roughly even sections while keeping the tomatoes intact - don't press too hard, you're just preparing to remove the skins later
  7. Put the tomatoes in a pan on the stove top, covered with simmering water, for about 5 minutes
  8. Scoop out the tomatoes, and let cool until you can slip the skins off
  9. Put the tomatoes in a skillet on the stove top with a little olive oil, and mash with a spoon
  10. Bring the tomatoes to a boil, turn down the heat, and go and stir every now and then until the oven timer goes off
  11. Let the aubergines cool until you can chop off the stem end and slip the skin off
  12. Add the aubergine to the tomatoes, and mash (I used an ordinary potato masher), and then add the peppers and onion
  13. Adjust seasoning to taste, and cook for a couple of minutes (or more if you want)
I served this with roasted sweet potato (coated with olive oil and salt and placed on a pan in the oven at 200C/400F for 90 minutes, then served sliced in half and mashed with a little olive oil and a drizzle of maple syrup).
