One cup sunflower kernels, ground (or you can attempt to crush them with a mortar and pestle like I did)
One cup nuts, crushed (I used half a cup of peanuts and half a cup of cashews, but you could also use almonds).
Half a cup of tahini
Juice of one lemon
Two cloves garlic
Spring onion, chopped finely. (About half a cup but you could use more if you like).
Grated carrot (also about half a cup. You could also add or substitute zucchini).
+Pita bread to serve the patties on and a simple salad for the side.
Note: depending on the amount of onion and carrot it might be necessary to either add a small amount more tahini, or an egg substitute (a little bit of silken tofu would probably work).
Combine all ingredients in a bowl, mix, and form into balls.
Heat some oil in a pan and add the balls of mixture and flatten (you will need to do multiple lots). Fry until golden brown on each side and serve on top of the pita bread.
Edited to add: I forgot to to say that I also added a handful of chopped parsley and mint leaves (fresh).
