bananas as egg substitute for baking

hey, i've been trying to bake with bananas instead of eggs. any tips to make this go more smoothly? like exact proportions to work with? i ended up with a very rubbery, starchy cookie (it's flourless so it was a bit weird how incredibly starchy it was).
specifically, i'm trying to veganize peanut butter cookies:
1 cup peanut butter
1 cup sugar (i just use unrefined)
1 egg (banana?)
chocolate chips (optional)
