So, can someone recommend a Green Bean Casserole recipe to me that they have tried? I don't care how bad it is for you. [I would actually prefer it to have canned green beans...] I just want it to be as close to traditional casserole as possible. If I make the dish, I am under a lot of pressure, because my mom agreed to let me do it, as long as it didn't taste gross. [She's convinced anything vegan is gross.]Plus she's not going to make two batches, like the stuffing, it would just be mine. & it is going to possibly be feeding two 80 year olds. So I don't want them to think it's gross either. Oh, & it should be able to feed about 6-8 people with left overs, please!
My next question is about tofurky. I need some suggestions on how to cook it. This will only be feeding my sister, boyfriend, & I. So vegans will be used to the taste of 'fake' meat. My friend told me he cooks his with some veggies in the bottom of a pan, drizzled in olive oil. Then he drizzles his tofurky with olive oil & puts herbs on top. Then he covers it with foil, & cooks it. But I'm afraid it will turn out dry if I don't baste it or add anything else to it. Should I coat it in a rub? How about the orange juice & soy sauce glaze on the back of the box? Would it be best to use that?
My last question would be, has anyone tried this recipe for pumpkin cheesecake? I first found it in a vegetarian starter kit recipe booklet from a different site, & then I saw vegcooking has the same recipe on their site. If anyone has tried this, is it close to regular cheesecake? If not, can anyone recommend a good pumpkin cheesecake? I saw one in the tags, but it called for three tubs of tofutti cream cheese, & I can't really afford three tubs of it. :(
