frozen unpitted cherries

I froze a whole bunch of unpitted cherries. I want to use them up for either cherry preserves or pie filling. Should I thaw them, then pit and cook them? Or would it be okay to cook them up and then remove the pits?

The recipe for the cherry preserves is very basic: some cherries, sugar and orange juice cooked till it reaches the correct consistency. Any ideas on how to make it yummier?
