"Cream" of Potato Soup

My Mema gave me this recipe and it's one of my favorites!

Chop up:
2 Medium Onions
1 Stalk Celery (Chop in Food Processor)
1/2 c. Fresh Parsley or 2 tsp. dried

Put in a pan with 1 c. water and saute for 5-8 minutes.

Add:
5 c. water
5 c. cubed potatoes (Mema chops 'em in the food processor)
4-5 tsp. salt
1/2 tsp. Pepper

Boil until potatoes are soft.

Blend 1/2 c. cashews and 1 c. hot water in blender

Add to soup and simmer

You may want to add 1 tsp. sweet basil
1/2 tsp thyme
1/4 tsp oregano

(Mema didn't use these, she just used pepper)

Makes: 20 1/2 c. servings
38 calories per serving

*If you want it a little thicker, add more cashew mixture.
