seitan brains

i'm making my first attempt tonight to make my own seitan (i love it in restaurants, but i hate the boxed whitewave kind)

what i've got simmering away on the stove resembles monkey brains and is sort of falling apart as it simmers.

i followed the recipe from VWAV to the T. i'm confused.

any advice to make next time go better?
i mean, i'll probably eat this stuff, cuz it's wheat gluten and it smells good, but it looks FAR from apetizing right now.
