Photobucket</br>I made this cake last night, for my (also vegan) boyfriend. I borrowed his Joy of Vegan baking book, and looking through it, this cake really stood out. I'm German and I thought it would be fun to make a somewhat traditional German cake. This cake is much heavier than most cakes, has a different texture. It's not too sweet. I love this recipe, so easy!

In case you don't have the book and you want to make it, here's the recipe:

3 apples, peeled, cut into slices
1/2 cup vegan butter
1/2 granulated sugar
1/2 cup apple sauce
2 tbsp soymilk (or whatever you use)
1 1/2 cups flour
2 1/2 tsp baking power

(If you want to eliminate the vegan butter, use one cup of apple sauce. I did this, turned out nicely)

1/4 brown sugar
1/2 tsp cinnamon
1/2 tsp ground ginger

Lightly grease 9" round cake pan, set aside. Cook the apples into a little bit of water until soft, not mushy, set aside.
Cream together the butter and sugar. Add applesauce, and milk. Mix, add flour and baking powder. Put the batter into the pan. Arrange apples on top of the cake in a circle (or however you want) to cover the cake. Sprinkle the topping over the cake. Bake at 350F for 30, 40 minutes. Let cool for at least 15 minutes before you take it out.
