tun-ish melts

 my mom used to make tuna melts when i was a kid and lately ive been on a big comfort food kick.  i used to just eye-ball this recipe but i finally quantified it.

tun-ish melts

makes: 8 melts
prep time: 48 hours (dont let this scare you) +30 mins
baking time: 15 mins

fake tuna salad

1 pound extra firm tofu, frozen thawed and crumbled
1/2 cup vegan mayo of choice
4 tsp lemon juice
1 Tbsp dill relish
1 Tbsp kelp powder or 2 Tbsp kelp flakes, you can also make kelp flakes by throwing nori sushi sheets in a seed mill
1 tsp onion powder

cheeze sauce

1/4 cup vegan margarine
1/4 cup flour
1 1/2 cup boiling water
2 tbsp soy sauce
1 1/2 tsp garlic powder
dash of tumeric (mostly for colour, if you dont have it, the world wont end)
1/2 cup nutritional yeast

4 whole wheat english muffins, split

Pre heat oven to 350 degrees.

1. the secret to the tuna salad is freezing and letting the kelp powder sit long enough  to  blend the flavour.  if you dont  freeze the tofu, it will be ok, but freezing gives it a bit of a chewier texture.  and you can make the tun-ish salad right before making the melts, but your leftovers will test better than your first-overs. to do this you have to think ahead and it takes two days, one to freeze and thaw the tofu, the other to make the salad.

2. make the tuna salad the night before or in the morning (if you are making this for dinner).  keep in fridge until use.

3.  squeeze as much water as you can from the tofu, otherwise you will have soggy melts.

4. combine all tun-ish salad ingredients and mix well.  it might seem a bit dry and kinda bland, but let it do it's magic.

5. make the cheeze sauce. melt margarine over low heat, add flour and wisk til smooth and bubbling.

6. add water, salt, soy sauce, garlic powder and tumeric.  whisk until well dissolved.  it will thicken as it cooks.  if it gets too thick, add a smidge more water.

7. add nutritional yeast. it should be very thick now.  almost like frosting.  a smidge extra soy sauce or garlic helps if the cheeze sauce tastes off.

8. now to make the melts.  do a taste test of the salad.  give it whatever it needs.  usually a bit more onion or relish does the trick.

9 divide the tun-ish salad evenly between the english muffins.  a little dent in the middle will keep the cheese in place if it's a bit runny.

10. pour cheeze sauce over the tuna melts.  depending on how much you put on, you may have a bit sauce left over or french fries or something else, if you so desire.

11. place on baking sheet for 15 mins in oven and voila!

12.  let cool a bit before taking a first bite.  burning the roof of your mouth sucks.
