yummy caramel chocolate microwave popcorn!

so, around the holidays, my boyfriend and i were pretty low on funds, so we decided to buy cute little tins and make some homemade caramel corn. the recipe we used took a pretty long time, but it tasted pretty yummy. however, it was the chewy old-fashioned caramel corn that stuck to your teeth, and i wanted to make more of a cracker jakc, cripsy corn. i will post the recipes for both, as both are big hits and totally different. the second one is wayyyyyy easier, and resulted in the cripsy texture i was looking for. i tinkered around with the recipe and have made it into a chocolate caramel corn. i have been on a cleanse for the past 21 days and haven't gotten to try it yet, but both my nostrils and my boyfriend say it's glorious!

old fashioned caramel corn: (chewy)

ingredients:
7 quarts plain popped corn
2 cups dry roasted peanuts (optional)
2 cups brown sugar
1/2 cup light corn syrup
1 tsp salt
1 cup margarine
1/2 teaspoon baking soda
1 tsp vanilla

directions:
place the popped popcorn into a big, brown paper grocery bag, and set two shallow greased baking pans aside. you may use roasting pans, jelly roll pans, or disposable roasting pans. set aside. preheat the over to 250 degrees F (120 degreees C). (i actually set mine at 200F and it was fine, but i dont know what that is in celcius, sorry.) Combine the brown sugar, corn syrup, margarine and salt in a sauce pan. bring to a boil over medium heat, stirring enouggh to blend. once the mixture beings too boil, boil for 5 minutes stirring constantly.
remove from heat, and stir in the baking soda and vanilla. the mixture will be light and foamy. immediately pour the mixture on top of the popcorn in the bags. Addd in peanuts.  Close bag and shake, shake, shake! don't be too worried if it's not completely coated, you'll have time for that later. scoop the covered popcorn into the two baking pans adn pop in the oven. Bake in the oven 45 minutes, taking out to stir every 15 minutes.
Dump the corn out onto waxed paper and sperate pieces. let cool completely, then store in an air tight container. YUM!

Now for...

Lauren's Super Duper Quick and Easy Caramel Chocolate Corn! (that needs a shorter name.)

1 cup brown sugar
1/2 cup vegan margarine (or you could sub in peanut butter instead of marg, just use more pb)
1/4 cup white corn syrup
1/2 tsp salt
1/2 tsp baking soda
3 quarts popped corn (10 1/2 tablespoons unpopped)

Lauren's additions: (add them if you're feeling crazy!)
1 1/2 cups peanuts (or any other nut. slivered almonds work well too because tehy stick easily)
2 tbls unsweetened cocoa powder
1/2 tsp vanilla
2 dashes cinnamon (seriously, a little goes a long way. i just went *dash* *dash* and you could taste it.)

Put popcorn in large paper grocery bag. Set aside.

Combine sugar, butter, sytup and salt in a 2 quart microwave safe glass bowl. (if you don't have a microwave, or don't use them as I try not to, you can cook this on the stove I would think. I just gave in because the microwave is so quick and easy!) Bring to a boil in microwave on high. Cook on high 2 minutes more. Remove and stir in cocoa powder and cinnamon. stir. add vanilla and baking soda and stir. mixture will become foamy. Pour over popcorn in bag. close and shake well.

coook bag in microwave on high 1 1/2 minutes. shake well and cook another 1 1/2 minutes on high. take out and shake well again. pour on wax paper or slightly greased cookie sheet to cool. Eat! 

Enjoy! Next we were going to try adding sweetened coconut shreds or some peanut butter, but I'm waiting till my cleanse is done (next Friday!) and I can actually eat it. I would love to hear any new concotions to try out!
