Chocolate Cherry Layer Cake


I made this yummy cake for my husband for Valentine's day. I am please to report that it came out delicious! The frosting is very sweet but balances nicely with the not terribly sweet cake.

Cake:
1 1/2 cup unbleached all purpose flour
1/2 teaspoon baking soda
1 cup sugar (I used turbinado)
1cup cold brewed coffee (or cold water)
1/3 cup cocoa powder
1/2 teaspoon salt
1/2 cup vegetable oil
2 teaspoons vanilla extract
2 tablespoons apple cider vinegar
Maraschino cherries for garnish (optional but gives a great flavor)

Preheat oven to 375 degrees. Lightly grease cake pan (mine was 9") with margarine & dust with cocoa powder.
Sift cocoa, sugar, baking soda & salt in large mixing bowl.
In another bowl mix oil, coffee (or water) & vanilla.
Add liquid to the dry ingredients & mix well.
Add vinegar & stir.
Quickly pour into pan & bake for 25-30 minutes until toothpick comes out clean.

*Optional for layer cake: Let cool completely and then put into freezer for 5 minutes.
Cut in half with serrated bread knife. Spread layer of frosting & replace top. You can also put some cherries in there as well.

Frosting (was posted in comments a few days ago by nidbit):
1/2 cup vegan margarine (I used Smart Balance Light)
2/3 cup cocoa powder
3 cups powdered sugar
1/3 cup soy milk
1 teaspoon vanilla

Melt margarine. Stir in cocoa.
Add sugar & soy milk alternately while mixing to a nice consistency.
Add additional soy milk of needed.
*I let this firm up in the freezer for a few minutes before using.
