My boss at the coffeehouse/restaurant I work at has finally allowed me to keep the place supplied with a vegan sweet at all times (whoo!). However, she is not into the idea of buying any specialty vegan food. Things like egg replacer and butter replacer won't be too much of a problem, I already talked her into buying applesauce, and I can use some neutral-tasting oil if necessary.
So, my questions are these:
1. If your local coffee shop had only ONE vegan pastry option, what would you want it to be?
2. How would you make that with easy-to-find-in-a-non-vegan-kitchen things?
My biggest problem is the sweetener. I know about all sorts of sweeteners, but what can I use that's [b]cheap[/b]? I don't think my boss will spring for vegan sugar, although if I could find some for a bargain, it's possible, especially if the recipe contained very little sugar. Something sweetened mostly with fruit might be a good idea. Molasses is also a possibility.
