Brunch: Frittata, Pancakes and Tempeh Bacon!

I made the Frittata recipe from The Uncheese cookbook. It was very good though a bit mushy on the inside. (I probably didn't bake it long enough!) It's got a variety of veggies inside: potatoes, onions, spinach, red bell pepper and zucchini. Below is the frittata out of the oven. The top was very dry and firm which is why I took it out when I did. I was afraid if I baked it longer it would burn.

Here's everything plated along with fresh OJ in my favorite Concordia University mug. I was enjoying the food so much I forgot to have some chocolate almond milk too! The pancakes and tempeh bacon are from Vegan with a Vengeance and they always come out great! By the way, the sauce on top of the frittata is just plain old vegenaise mixed with ketchup!
