1.5 C seedless grapes
Flour (enough for coating the tomato slices)
2 large, under-ripe tomatoes, each cut into 4 slices (total 8 slices)
Salt & pepper (to taste)
6 TBSP oil
4 cloves garlic
2 TBSP tomato sauce
Parsley to garnish
1) Coarsely puree 1C of the grapes in a blender or food processor. Strain the grapes, saving the liquid, and discard the solids (in your mouth ;)). With the remaining half-cup of grapes, slice each one in half and set aside.
2) Place the tomato slices in the flour until each side is well coated. Sprinkle tomato slices with salt and pepper. Heat two pans on medium-high heat, with 3 TBSP oil in each pan. Add 2 garlic cloves to each pan, heating for approximately 30 seconds. Add 4 tomato slices to each pan, heating for approximately 3 minutes each side. Put on plates and set aside.
3) In a pot, whisk & bring to a boil the saved grape juice together with the solid grape halves, tomato sauce, and salt & pepper.
4) Pour the sauce atop each of the 8 tomato slices. Garnish with parsley, and serve!
