Chocolate chip cookies

I've been playing around for a few weeks with a bunch of different recipes and I believe I have found a pretty ideal chocolate chip cookie recipe. It has a rich, brown sugary flavor, a nice crisp exterior with a chewy center, it isn't at all greasy, and it tastes great as dough.
I veganized this from a Weight Watchers recipe, but I also increased the size of the cookie, so that throws off the points. (If you care, I figure about 3 points for 2 cookies) Makes about 32 cookies.

1/4 cup vegan stick margarine (I used Earth Balance stick, original called for butter)
1/4 cup canola oil
1 cup brown sugar (I used TJ's organic. The original recipe calls for dark brown)

1 tbs Ener-G egg replacer powder (original called for 2 egg whites)
1/4 cup warm water (replaces moisture from eggs)
2 tsp vanilla extract
1/4 tsp salt

1 1/2 cups flour
1/2 tsp baking soda

1 cup chocolate chips

Preheat oven to 375.

Cream oil, sugar and margarine until well combined and a bit fluffy. Add egg replacer, vanilla, and salt and beat until fluffy. In a seperate bowl, whisk to combine flour and baking soda, fold into wet ingredients. Stir in chocolate chips. 

Drop by rounded teaspoons onto a baking sheet covered with parchment or a Silpat ( I <3 my Silpats) about 2 inches apart. Bake for 10 minutes, allow to cool 5 minutes on the sheet and then transfer to a cooling rack.
