Colcannon!

I made colcannon tonight. It is insanely cheap, easy and tasty.

What you'll need:
2 large potatoes (2-3lbs total) well washed(and peeled if thats your pleasure)
1/2 head of cabbage
1 onion
nondairy sour cream(4oz ish) or milk(use your best judgment)
4-5 tablespoons margarine.
Salt and pepper

What you do:
Bring a pot of water to a boil. Chop your potatoes and throw them in.

Chop the onion and cabbage. Heat a large skillet, add a dash of olive oil and the chopped cabbage and onion. Cover and let it cook until its tender, stirring semi-frequently.

Mash the potatoes. Add the milk/sour cream and marg and incorporate. Mix in the onions and cabbage with a spoon.

Add salt and pepper to taste. Eat.
