coffee cake!


so today my mother randomly asked me to bake a coffee cake. haha. i love this coffee cake, its so moist and yummy!






the recipe is originally from a betty crocker cookbook from long long ago :]

streusel coffee cake

streusel (below)
2 cups flour
1 cup sugar
3 tsp baking powder
1 tsp salt
1/3 cup margarine (melted)
1 cup soymilk
1 egg (egg replacer or sub.)

preheat oven to 350. prepare streusel. beat remaining ingredients on low for 30 seconds and then on medium for around 2 minutes, scraping bowl occasionally. pour into 13x9x2 pan and top with streusel. bake for 25-30 minutes depending on your oven. [the book says 35-40 minutes but that is way too long, my oven only takes 25 minutes at 350. just make sure that when you stick a toothpick in the middle it comes out clean]

streusel (mix all ingredients)
1/2 cup chopped nuts (i use walnuts)
1/3 brown sugar
1/4 cup flour
1/2 tsp cinnamon
3 tbsp margarine (melted)

i usually double the streusel, for extra yumminess. although that pretty much turns it into a dessert :] oh and when doubling it, i only use 5 tbsp of margarine instead of 6.
