Cupcake questions

I have VCTOTW. I have cream cheese frosting sitting in my fridge that I made on Easter. Its been sealed up since Easter (March 23). Is it still safe to use?

Also, I want to make some type of peanut butter and chocolate cupcakes. Peanut butter cupcakes with chocolate frosting? Chocolate cupcakes with peanut butter icing? Throw chocolate chips into the peanut butter batter? Any ideas of combinations would be awesome.
