Spicy Seitan Noodle Stir-Fry

Usually when someone posts a recipe without a photo of the finished product, I won't try it myself; but I was just too damn hungry to stop a take a picture before I demolished my plate.

3/4 cup broth (just need to cover your seitan)
2 cloves garlic, minced
1 Tbsp ginger, minced
1 Tbsp teriyaki sauce
1 Tbsp tamari
2 tsp chili or sesame oil

For the noodles:
1/2 pound noodles of your choice (I used udon)
1/2 cup sliced green onions
1/2 cup basil, sliced (optional)

Follow up marinade ingredients:
1 Tbsp szechuan sauce
1 Tbsp tamari
2 tsp sirracha
1 Tbsp arrowroot (I had to use a lot more to get it to the consistency I wanted)

Vegetables of your choice (I used baby corn and spinach)

Chop seitan into bite sized pieces. Marinate in the above marinade for at least an hour. Drain but reserve marinade. Stir fry seitan in a small amount of peanut oil. Remove from pan and set aside. Stir-fry any vegetables. While all this is going on, cook your noodles.

Take the leftover marinade and add the follow up marinade ingredients except the arrowroot. Heat in a small saucepan, testing for seasonings then whisk in the arrowroot to desired thickness. Add this to the drained noodles, tossing in the green onions and basil.

This was so, so good. I can't remember where I found the recipe, so if it's yours thank you very much.
