MMMMexican Pizza!

So, I had a few scraps laying around and decided to make a quick mexican pizza. Of course, you can add tons more veggies, but it's like 100 degrees outside and I didn't want to go to the store so I made it simple. 

So, I didn't want to deep fry my tortilla pizza crust, so I just brushed it with some olive oil and put it in the toaster oven for about 4 minutes on each side until it was nice and crispy. This actually worked really well, and wasn't all gross and greasy.

Yummiest Easiest refried beans:

I just chopped up half of a white onion and sauteed it in some olive oil in a pan on medium high heat until almost translucent. Then I added about 2-3 cloves of minced garlic. Sautee for another minute.


I used canned beans because that's what I had. I just drained the can, keeping the liquid aside to use to later. Toss in a 29oz (or however many ounces of beans you want/have)  in the pot. Stir around and add a little liquid so it's not dry. I like to cook this for a  minute or two together before I start mashin'. 

**My newly added ingredient that I think make the beans great- liquid smoke. Many authentic beans out in restaurants have lard in them, as I'm sure you all know, and the liquid smoke really makes the beans have that smoky taste, but not in a gross way. I just add a drop or two in the beans right before I mashed them.

Mash the beans until they are the consistency you like. Keep putting liquid from the can in so they do not dry out. salt to taste. With the other ingredients, I have found that not a lot of salt is needed.


Put beans on crispy tortilla crust. I topped it with some shredded cabbage because that's what I had and it actually tasted really good and was more healthy than your usual lettuce. I had some diced tomatoes and topped with hot sauce. This actually isn't too unhealthy, especially if you load it up with veggies.
