fig, almond, cranberry thumbprint cookies

i kind of followed a recipe from veganomicon, but i didnt have a few things so this is what i ended up with. they are pretty friggin good. crunchy from the turbinado sugar and not too sweet despite the amount!

1/4 c soy milk
2 t ground flax seed
((mix these til frothy. put in mixing bowl

1 1/4 c turbinado sugar
2/3 c canola oil
1 1/2 t almond extract
((add these to the soymilkflaxseed mix and blend well

1 c flour
1 t baking powder
1/2 t salt
((add this to the mix and blend

1 c flour
((add this slowly until you reach a durable, but not too dry consistency

1/4 c dried cranberries, chopped
1/2 c fig preserves
((mix in the cranberries.
((roll dough into golf ball sized..balls, put onto sheet pan and press your thumb into the middle.
((fill holes with jam.

bake 15-20 minutes at 350 F.

eat a lot of them.
